SO Magazine 2017 profile

Bruce McMichael is an experienced food and travel writer, photographer and author. His first book Cook Wrap Sell was published by Brightword/enterprisenation.com in 2012. His second book has now published. Called Cook Wrap Export, it’s a guide-book for food producers looking to sell their produce internationally.

While living in the English county of Shropshire Bruce created two food magazines Taste Shropshire and Taste Herefordshire covering the vibrant local food scene in the two counties. He is also an active member of the Guild of Food Writers.

CURRENT

Bruce graduated with a Masters in Food Culture, Communications & Communications from the University Of Gastronomic Sciences in Pollenzo, Piedmonte, northern Italy. Having studied modules such as food history, marketing of high quality products, sensory analysis and appreciation of products such as wine, wine-based spirits (eg grappa) and bread; pizza making he is now researching a thesis about cooking schools. During the course, his class travelled to southern Italy (Campania and Basilicata); The Netherlands (Amsterdam, Rotterdam, Utrecht, Eindhoven) and Japan (Osaka and Mie Whilst at the university, he ran an informal creative course known as the Global Writers for fellow students coming form countries such as Mexico, Venezuela, the US and Australia.

TV

WINNER of an episode of the ITV (the UK’s main indepenent TV channel) ‘Gordon Ramsey’s Culinary Genius.

I was a guest judge on the popular ITV show ‘Country Show Cook Off’. My fellow judges were Ludlow-based chef and writer Lesley Mackley, and Xanthe Clay of The Daily Telegraph. Here’s a photo of us on the day, just before we tuck into Fidget Pie!

RADIO

I have been interviewed on several radio programmes including the Jim Hawkins show on BBC Radio Shropshire and Channel FM’s Scoff and Quaff show which broadcasts online from Kent, England.

From the programme notes for ‘Scoff and Quaff’ … Flavour Living Radio brings the best of Scoff and Quaff on the radio. The guests are Colin Harkness @Colinonwine telling us all about Spanish white wines. This was followed by Phil Miles @GodmershamGame talking about his game business whilst sampling some of his cooked venison cooked at The Bistro next door to studio courtesy of Kate Kendall. Our final guest was Bruce McMichael @CookWrapSell telling us about his two books giving advice for new food businesses on UK & Export markets & his latest project on old Kentish recipes.

EQUIPMENT

My preferred camera is a Canon 70D for stills and video with my Canon 400D as a backup. I also use a GoPro+ Black for video. As for the lenses, I generally shoot with a Canon EF 28mm f2.8 IS USM; Canon EF 50mm 1:1.4 USM and Sigma 18-200 F3.5-6.3.
